Simple Apricot Ginger Shrimp

Whip up this simple recipe as a great appetizer for and end-of-summer party.

Ingredients:

        • 1 pound peeled shrimp (deveined)
        • 1 cup apricot preserves
        • 1 tbsp ground fresh ginger 
        • 2 tsp chili powder
        • Kosher salt Black Pepper

Directions:

  1. Pre-set oven to broil.
  2. In a small saucepan, cook 1 cup apricot preserves, 1 tablespoon grated fresh ginger, 2 teaspoons chili powder and ¼ teaspoon kosher salt over medium heat, stirring, until melted, about 2 minutes.
  3. Place shrimp in mixing bowl and stir in ½ of the apricot, ginger sauce, covering shrimp completely.
  4. Place shrimp on a rimmed baking sheet, and lightly season with kosher salt and black pepper.
  5. Broil in oven until browned in spots and opaque throughout, 3 to 4 minutes.
  6. Serve with the remaining sauce.
